1 Tbs. olive oil
3 medium ripe tomatoes
1 Tsp. fresh basil
½ tsp. Gordo’s Dry Salsa Mix
Salt to taste
¼ tsp. sugar
1 Tbs. red Spanish onion
Olive oil for brushing bread
Heat oil in pan. Chop tomatoes and add to pan. Cook over high heat 1 minute.
Transfer mixture into bowl and add shredded basil, sugar, diced onion and Gordo’s salsa mix.
Mix well. Use 1 crusty Italian bread, cut into 12 pieces and grill or toast until light brown.
Rub half a clove of garlic over 1 side of each piece. Brush each piece of bread with more olive oil.
Divide tomato topping between 4-6 slices, leaving the rest plain. Serve the bruschetta warm.
