Pearson's Saskatoon Berry Pancakes


  • 1 ½ cups flour
  • 3 tablespoons baking powder
  • 2 tablespoons white granulated sugar
  • ¼ cup unsweetened coconut finely shredded
  • 1 teaspoon cinnamon
  • 1 ¼ cups milk
  • 3 tablespoons melted butter
  • 3 whole eggs
  • ½ teaspoon almond extract
  • 2 cups Pearson's Frozen Saskatoon berries

Garnish (optional)

  • Pearson's Saskatoon Syrup
  • whipped cream
  • additional Saskatoon berries


  • Sift flour, baking powder, cinnamon, coconut and sugar together in a bowl.
  • Pour in milk and butter and mix well. Stir eggs and almond extract into flour mixture until batter is smooth. Fold in Saskatoon berries.
  • Spray a griddle or frying pan ( I use an 8 inch non-stick frying pan) with non-stick cooking spray and preheat over medium heat.
  • Drop batter in about ⅔ cupfuls onto the griddle and cook until several little bubbles form on the surface and the edges are dry (3 to 4 minutes).
  • Flip and cook until browned on the other side, about 3 minutes. Repeat with remaining batter.


  • Serve with whipped cream, Pearson's Saskatoon Syrup and additional saskatoon berries, if desired
