Pearson's Saskatoon Berry Pancakes

1 ½ cups flour

3 tablespoons baking powder

2 tablespoons white granulated sugar

¼ cup unsweetened coconut finely shredded

1 teaspoon cinnamon

1 ¼ cups milk

3 tablespoons melted butter

3 whole eggs

½ teaspoon almond extract
-
2 cups Pearson's Frozen Saskatoon berries
Garnish (optional)
- Pearson's Saskatoon Syrup
- whipped cream
- additional Saskatoon berries

Sift flour, baking powder, cinnamon, coconut and sugar together in a bowl.

Pour in milk and butter and mix well. Stir eggs and almond extract into flour mixture until batter is smooth. Fold in Saskatoon berries.

Spray a griddle or frying pan ( I use an 8 inch non-stick frying pan) with non-stick cooking spray and preheat over medium heat.

Drop batter in about ⅔ cupfuls onto the griddle and cook until several little bubbles form on the surface and the edges are dry (3 to 4 minutes).

Flip and cook until browned on the other side, about 3 minutes. Repeat with remaining batter.
